Composition and Rheological Properties of Peanut Oil Bodies from Aqueous Enzymatic Extraction

In this study, the relationship between composition and rheological properties of peanut oil bodies from aqueous enzymatic extraction was evaluated. Aqueous using a combination cellulase pectinase at 1:1 ratio effectively destroyed structure cell wall resulted in maximum body yield 90.7%. The microstructure interfacial membrane were observed by confocal laser scanning microscopy. contained three inherent proteins (oleosin, caleosin, steroleosin) along with two adsorbed foreign (arachin lipoxygenase). Five phospholipids detected 31P nuclear magnetic resonance spectroscopy. Among them, phosphatidylcholine, which plays major role stability bodies, most abundant. measured indicated that typical elastic system. Elevated temperature high-speed shear binding phospholipids, reducing stability. findings will facilitate commercial application improving rate clarifying their stabilization mechanism.
